Psyche Organic: Revolutionizing Olive Oil with Community and Sustainability
From New York Arts to Copenhagen Farms
Theophilos, founder of Psyche Organic, transitioned from a 12-year career in independent book publishing and arts community-building in New York City to launching a sustainable olive oil company in Copenhagen. Inspired by a Greek farmer’s organic methods discovered during research tied to Japanese farmer Masanobu Fukuoka, Theophilos shifted focus amid the 2020 pandemic. This move reflects a deep personal and professional transformation, emphasizing wellness, transparency, and community.
Sustainable and Transparent Olive Oil Production
Psyche Organic produces cold-pressed olive oil sourced from ancient olive trees in Greece, some up to a thousand years old. The olives are harvested in November by manual raking, transported to mills for washing, pit removal, and pressing to extract juice. Theophilos and his team participate actively each harvest season, ensuring organic, chemical-free practices and direct collaboration with farmers to maintain quality and authenticity.
Creating a Diverse, Inclusive Community in Copenhagen
Psyche Organic stands out in Copenhagen’s small but growing market by promoting inclusivity across race, gender, and backgrounds through health-focused products. Beyond selling olive oil, the brand fosters education on product transparency, combating corruption common in the olive oil industry. A flagship store serves as a showroom and community hub, hosting events that keep connections alive despite the absence of a permanent café space.
Collaborations and Urban Presence
Last year, Psyche Organic partnered with culinary curator Mati Pichci to run a temporary café residency at the renowned former Relæ restaurant, leveraging food culture to deepen community ties. Theophilos now expands the brand’s reach through physical activations in Milan and plans further distribution in New York (via Scarr’s Pizza), Los Angeles (Homesick Studios), as well as across Scandinavia, Asia, and Northern Europe.
Innovation in Packaging and Branding
The brand’s eco-friendly packaging—uncommon in the olive oil sector—reflects its commitment to sustainability. Combining Theophilos’ background in design, photography, and creative direction, Psyche Organic employs a fashion-brand mindset to marketing, setting it apart from traditional olive oil companies. This fresh approach helps attract a diverse, design-savvy audience.
Vision for Sustainable Impact and Community Support
Inspired by Patagonia’s founder Yvon Chouinard, Psyche Organic aims to reimagine one of the most opaque food industries by building a transparent supply chain that delivers quality, health, and authenticity. Long-term goals include scaling the business responsibly, giving back financially to communities, and eventually retiring to cultivate a farm and art residency off-grid, merging food and creativity.
Overcoming Challenges: Ego and Identity Shift
Theophilos candidly shares the difficulty of leaving behind his established New York identity centered around Paradigm, his book publishing venture. The process involved personal ego dissolution and embracing new realities in a different city and industry. His journey highlights the importance of adaptability and aligning professional life with evolved personal values.
Psyche Organic represents a compelling blend of sustainable agriculture, community engagement, and innovative branding, setting a new standard in the olive oil market with transparency and inclusivity at its core.
