Organic Agriculture in the United States: An Economic Overview

Rising Consumer Demand and Market Growth

Since the 1990s, U.S. consumers have liked organic products. Demand grew fast. Farmers then chose organic practices for crops and livestock. USDA data (2011–2021) show these changes:

  • Certified organic cropland rose by 79% to 3.6 million acres.
  • Certified organic pastureland/rangeland fell by 22% to 1.3 million acres.
  • Organic farms increased by over 90% to 17,445 operations.

This growth shows organic agriculture is active and evolving.

Distribution Channels and Retail Sales

Grocery stores lead organic food sales. By 2020, they—grocery stores, club stores, and supercenters—sold 56% of organic items. They beat natural food stores. Other channels are natural and specialty retailers (over 33%), farmers markets, CSAs, direct-to-consumer, and online stores. Online sales grew from 2% in 2012 to 6.7% in 2024. The Organic Trade Association noted organic food sales rose from $38.6 billion in 2012 (in 2024 dollars) to $65.4 billion in 2024. Fresh fruits and vegetables remain the top organic category. They earned about $21.5 billion in 2021, or one-third of all organic sales.

Price Premiums and Production Costs

Organic products often cost more than conventional ones. Consumers pay a premium. Production costs are also high. USDA data show:

  • Wholesale and retail premiums often exceed 20%.
  • Premiums for fruits and vegetables like strawberries, spinach, and apples have dropped.
  • From 2004 to 2010, organic retail price premiums changed. Some (like spinach and canned beans) dropped while others (like yogurt) rose.

Even with premiums, organic farming has higher production costs. USDA analysis shows that price gains help cover these costs, but expenses remain important.

Consumer Demographics and Preferences

Many people buy organic. Over 80% of U.S. households purchased organic food in 2016. Millennials (born 1981–1987) buy organic more than older groups. Health, environmental care, and animal welfare drive their choices. Organic buyers come from many groups. This trend makes organic food common in U.S. markets.

The Role of Trade in Organic Agriculture

Trade helps meet the demand for organic products. Since 2011, the U.S. tracked rising values for select organic imports. High-value imports, like fresh blueberries and squash, add to this growth. Importers must follow USDA organic standards or come from countries with approved organic agreements. This rule keeps trade products trustworthy.
