Psyche Organic: Revolutionizing Olive Oil with Community, Sustainability, and Transparency

From NYC Arts to Copenhagen Olive Oil Innovator
Theophilos, founder of Psyche Organic, transitioned from a 12-year career as an independent art book publisher and community organizer in New York City to launching an organic, cold-pressed olive oil company based in Copenhagen. Inspired by sustainable farming pioneers such as Masanobu Fukuoka, Theophilos embarked on an apprenticeship with a Greek olive farmer, immersing himself in the cultivation and production process.
Authentic Organic Farming and Cold-Pressed Production
Psyche Organic’s olive oil is sourced from resilient olive trees in Greece, some over a millennium old, cultivated without chemicals or pesticides. Each harvest season, Theophilos visits to oversee the cold-press process—starting from hand-picking olives in November, washing, pitting, and pressing them to extract pure olive oil. This hands-on involvement ensures quality and integrity from farm to bottle.
Building Inclusive Community in Copenhagen and Beyond
Psyche Organic is more than olive oil—it’s a community hub promoting health, wellness, and inclusivity across all races, genders, and backgrounds. Operating from a flagship showroom in Copenhagen, the brand hosts events and activations to educate consumers on olive oil quality and supply chain transparency. Psyche also temporarily ran a pop-up café in collaboration with renowned Copenhagen food curators, further engaging the local food scene.
Innovative Eco-Friendly Packaging
Standing out in the olive oil market, Psyche Organic uses a unique eco-friendly bag for its product distribution, underscoring their commitment to sustainability. The brand also integrates fashion-inspired aesthetics and creative collaborations, reshaping olive oil branding with a fresh, modern edge.
Strategic Expansion Plans
Currently serving select stores in New York (Scarr’s Pizza) and Los Angeles (Homesick Studios), Psyche Organic aims to expand throughout Scandinavia, northern Europe, and Asia. This international growth will help scale their transparent, sustainable model in a notoriously opaque olive oil industry.
Vision Rooted in Transparency and Longevity
Theophilos’ vision is to revolutionize one of the world’s most corrupt food sectors by creating a transparent supply chain that delivers genuine quality and health benefits to consumers. Influenced by Patagonia’s ethical model, Psyche Organic plans to scale responsibly with a focus on community impact. Looking ahead, Theophilos hopes to retire from day-to-day operations in 10-15 years to cultivate his own farm and establish an off-grid art residency.
Overcoming Personal and Professional Transitions
Leaving behind his identity tied to New York’s art and culture scene, Theophilos faced an "ego death" as he embraced this new chapter. This shift entailed relinquishing Paradigm, his previous publishing venture, and adapting to life and business in Denmark—challenges he approached with intentionality and openness.
