From NYC Publisher to Sustainable Olive Oil Entrepreneur
Theophilos’ journey began as an independent book publisher deeply embedded in New York’s artistic community for over a decade. In early 2020, driven by an interest in sustainable farming inspired by Japanese natural farmer Masanobu Fukuoka, he embarked on an apprenticeship in Greece. There, he connected with an organic Greek olive farmer and learned the traditional methods of cultivating and cold-pressing olives—some trees dating back up to a thousand years, known for their resilience and low water needs.
Each harvest season, Theophilos personally visits the farm in Greece to oversee olive picking—done by hand using long rakes—and the cold-pressing process, ensuring authentic, high-quality production without chemical inputs. After bringing this artisan product to Copenhagen, he launched Psyche Organic with a business partner.
A New Model for an Often Corrupt Industry
The olive oil sector is infamous for adulteration and opaque supply chains. Psyche Organic aims to change that model by offering complete transparency and authenticity. Key features include:
