Psyche Organic, founded by Theophilos—formerly a New York City-based independent book publisher—is pioneering a fresh approach to the olive oil industry with a focus on sustainability, transparency, and community building. Now operating out of Copenhagen, this brand is disrupting the conventional olive oil market and creating a unique cultural niche that blends art, wellness, and eco-consciousness.

From NYC Publisher to Sustainable Olive Oil Entrepreneur

Theophilos’ journey began as an independent book publisher deeply embedded in New York’s artistic community for over a decade. In early 2020, driven by an interest in sustainable farming inspired by Japanese natural farmer Masanobu Fukuoka, he embarked on an apprenticeship in Greece. There, he connected with an organic Greek olive farmer and learned the traditional methods of cultivating and cold-pressing olives—some trees dating back up to a thousand years, known for their resilience and low water needs.

Each harvest season, Theophilos personally visits the farm in Greece to oversee olive picking—done by hand using long rakes—and the cold-pressing process, ensuring authentic, high-quality production without chemical inputs. After bringing this artisan product to Copenhagen, he launched Psyche Organic with a business partner.

A New Model for an Often Corrupt Industry

The olive oil sector is infamous for adulteration and opaque supply chains. Psyche Organic aims to change that model by offering complete transparency and authenticity. Key features include:

  • Certified organic farming free from chemicals and harmful pests
  • Cold-pressed extraction preserving flavor and health benefits
  • Innovative eco-friendly packaging—a proprietary bag unique in the olive oil market

Copenhagen’s smaller but vibrant scene has embraced Psyche Organic’s philosophy. The company fosters community through educational events, brand activations, and previous collaborations like a temporary residency at a former Michelin-starred restaurant. Although Psyche Café no longer has a physical location, the brand maintains a flagship store/showroom serving as a hub for gatherings and direct consumer engagement.

Expansion into major urban centers like New York and Los Angeles is underway, with retail partners such as Scarr’s Pizza (NYC) and Homesick Studios (LA) helping integrate Psyche Organic into diverse communities. Plans also include growth across Scandinavia, Asia, and Northern Europe.

Vision Rooted in Ethical Growth and Future Farming

Inspired by sustainability leaders like Patagonia’s Yvon Chouinard, Theophilos sees Psyche Organic as a blueprint to disrupt corrupt food production models by infusing them with integrity and transparency. His long-term plan is to relinquish day-to-day operations in 10-15 years, retire to a self-grown farm, and establish an art residency blending ecological stewardship with creative expression.

Overcoming Challenges: Ego, Identity, and Transition

Transitioning from a New York creative identity to a Copenhagen entrepreneur involved profound personal shifts. Letting go of his former lifestyle and community ties required humility and acceptance. Yet, this transformation also embodied the brand’s ethos—that meaningful change combines both individual growth and collective wellbeing.
